The Tiger Nut is said to be the first cultivated crop and has been found in the Pyramids.
A dried tuber of the Cyperus esculentus (Chufa Sedge, Yellow Nutsedge, Tigernut Sedge, Earthalmond) or Chufa plant. Originating mainly from the USA or Spain where the ground up nuts are used to produce a ‘milk’ (Horchata) which is used in cooking.
Traditionally eaten dry in the UK - they are also nice(r) soaked in water, when they resemble Hazel Nuts.
